Friday Night Pizza!
We have made it a tradition in our house to have Friday pizza nights every other Friday. This recipe is one that I have tried and tested for many years. Trying to find the right balance and obtain those epic air bubbles was tough.
Ingredients
Dry Ingredients:
2-1/4 Cup GF Flour mix
1 Tbsp Sugar
1 tsp Salt
Wet Ingredients:
2 eggs (room temperature)
2 Tbsp Extra Virgin Olive Oil
1/2 Cup Milk
2 tsp Lemon Juice
1 tsp Apple Cider Vinegar
Yeast Mixture:
1/4 Cup Water (110-115 F)
1 tsp Sugar
2-1/4 tsp Instant Dry Yeast

Instructions
- Preheat oven to 350 F.
- Make yeast mixture: Combine sugar and yeast to warm water and let bloom for 5-10 minutes.
- Meanwhile, combine flour, sugar, and salt in a stand mixer. Mix together to incorporate.
- In a mixing bowl, combine eggs, olive oil, milk, lemon juice, and ACV. Whisk to combine.
- Combine dry ingredients, wet ingredients, and yeast mixture.
- With paddle attachment, mix for 5-7 minutes on medium speed (this will allow eggs to emulsify). The mixture will be a litter thicker than pancake batter.
- Spread the mixture on a circular pizza pan and let rise for 10-15 minutes.
- Bake pizza crust for 15-20 minutes, or until golden brown (make sure to use a fork and poke holes in the center of the pizza).
- Allow crust to cool completely before adding toppings.
- Turn oven up to 475 F.
- Add favorite toppings to pizza (have fun with this!)
- Cook for 10-15 minutes and enjoy.
*I use a pizza stone to cook our pizza on. It will give it a nice crispy crust. If you don't have a stone, you can cook right on the pizza pan.
