Zucchini Noodle Bowl

This is a super easy, very healthy dinner. I am always a fan of a meal that requires minimal clean up and preparation. Don't get me wrong, I love creating extensive meals but it is always nice to have some quick and easy meals.

Ingredients
1-2 zucchinis, spiralized
1/2 small red onion, thinly sliced
1 can black beans
1 ear (or can) of corn
1 avocado
Grape tomatoes, sliced
Feta cheese
Cilantro-Lime Vinaigrette
1/2 cup cilantro
1/2 cup neutral-flavored oil (like sunflower or vegetable)
3 Tbsp lime juice
2 Tbsp water
1 Tbsp apple cider vinegar
2 tsp honey
1 tsp garlic salt
1/2 dried oregano
Fresh pepper to taste

Instructions

  1. To make vinaigrette: Add all ingredients, except oil, to a food processor. While the motor is running, slowly add the oil to properly emulsify.
  2. Using a spiralizer, spiralize the zucchini and add to a mixing bowl.
  3. Add the thinly sliced red onion and toss with the vinaigrette.
  4. Top the bowl with black beans, corn, avocado, grape tomatoes, and feta.
  5. Enjoy a super easy/healthy meal!
